Cassoulet, a Chaurian speciality (the Chaurians are the inhabitants of Castelnaudary), is known worldwide and appreciated by the most demanding gourmets. Prodigious, with its aromas of duck confit and beans, this exceptional dish is an integral part of our heritage.

Take the time to appreciate one of the specialties of the southwest: the cassoulet à l'ancienne! Made in Castelnaudary, from local products, you will find the flavors of a French gastronomy. White beans, rind, pure pork sausage, taste the different elements of the original cassoulet recipe. This dish, first cooked during the medieval period, evolved with the importation of white beans, following the discovery of Christopher Columbus. Originally, the recipe included fava beans. You will find the "févoulade" which corresponds to the old recipe.
Preparation tips:
To enjoy your canned cassoulet, we recommend that you start by heating it in a bain-marie. Then, in a cassole or a terracotta dish, put it in the oven for 10 to 30 minutes to brown your dish.
